Ingredients
  1. 1 cup whole wheat flour
  2. ½ cup all purpose flour
  3. ¼ teaspoon cumin seeds, coarsely ground
  4. ¼ teaspoon salt
  5. 10 fresh mint leaves, minced
  6. 3 tablespoons vegetable oil
  7. 1/3 to1/2 cup water
  8. 1 tablespoon dried mint leaves
  9. Canola oil for deep frying
  10. Note: SERVES 4
Method
  • Prepare the dough in a food processor or by hand, mixing together all the dry ingredients and the fresh mint leaves then adding the oil to blend, followed by 1/3 cup water, until a dough is formed. Add more water if needed. Turn the dough onto a floured work surface and knead for 5 minutes. Place in an oiled bowl. Cover and rest for 30 minutes.
  • Divide the dough into 8 equal portions. Apply oil on both sides of the dough balls and flatten each with a rolling pin into round discs. about 3 to 4 inches in diameter.
  • In a medium sauce pan, heat oil a third full for deep frying over medium high heat. Deep fry the bread turning once to ensure it puffs up. Drain on paper towels. Serve immediately.
