Ingredients
  1. 8 oz. plain flour salt to taste
  2. 2 ½ oz. butter
  3. 1 dessertspoon cummin or
  4. caraway seeds
  5. 3 tablespoons milk hot water to mix
  6. Oil for deep frying
Method
  • Sieve the flour and salt into a mixing bowl. Heat the butter in a small pan until it bubbles. Pour it into the flour and add the cummin or caraway seeds. Stir well and add the milk and sufficient hot water to make a firm dough. Turn out on to a board and knead for 20 minutes. Roll out thinly and cut into strips, triangles or squares.
  • Heat oil in a deep frying pan. Fry until crisp and golden. Drain and serve.
  • VARIATION:
  • 2 teaspoons of coarsley ground pepper may be added to the dough, to make spiced matthies.
