Ingredients
  1. 1 tablespoon ghee or oil
  2. 8 oz. gram flour
  3. 1 teaspoon caraway seeds
  4. 1/2 teaspoon turmeric powder
  5. Pinch of chilli powder
  6. Salt to Taste
  7. 2-4 tablespoons water
  8. Oil or Ghee for deep frying
Method
  • Warm the ghee slightly and pour into the sieved flour. Add caraway, turmeric, chili, salt and water and mix to a stiff dough. Heat oil or ghee for deep frying. Put dough into vermicelli machine or Mouli shredder, hold the machine six inches above the hot ghee and pass the dough through to form strips. Fry till crisp and golden. Sev may be preserved in an air-tight tin and make a delicious tea time snack.
