ليموں کا اچار (INGREDIENTS)
  1. تازہ عمدہ قسم کے ليموں تين عدد
  2. چيني آدھا کلو
  3. کالي مرچ آدھي چھٹانک
  4. سرخ مرچ حسب ضرورت
  5. سرکہ انگوري خالص ايک بوتل
  6. ادرک آدھي چھٹانک
  7. نمک باريک پسا ہوا آدھا کلو
METHOD
  • ليموں کو صاف پاني سے اچھي طرح دھو کر دو دو ٹکڑے کر لیں ادرک چھيل کر باريک قاشوں کي طرح کاٹ لیں۔ دھلے ہوئےليموں کو کسي شيشے کے مرتبان ميں ڈال کر اوپر سے نمک چھڑک ديں اور انہیں تين دن اسي طرح پڑا رہنے ديں، مگر دن ميں ايک دو مرتبہ انہیں خوب اچھي طرح ہلا کر ملا ديا کريں، تين دن کے بعد نمکين پاني پھينک ديں اور ليموں کو کسي صاف کپڑے ميں رکھ کر آہستہ آہستہ تاکہ جو رہا سہا نمکين پاني ہو وہ بھي نکل جائے، اب کسي بڑے برتن ميں سرکہ، چيني، کا لي مرچ پسي ہوئي، سرخ مرچ پسي ہوئي اور ادرک کے ٹکڑے ڈال کر خوب ملائيں، جب يہ سب چيزيں مل کر خوب اچھي طرح يک جان ہو جائے تو ليموں ايک مرتبان ميں ڈال کر دو مرتبانوں ميں ڈال کر اوپر سے تيار شدہ مرکب ڈال ديں اور اچھي طرح سے ان کا منہ بند کر ديں، ايک ہفتہ تک اسي طرح پڑا رہنے ديں، صرف دن ميں ايک مرتبہ ہلا ديں، آٹھ دن ميں اچار کھانے کے لائق ہو جائے گا
