Ingredients
  1. 1) Spinach 2 bunches
  2. 2) Khatta leaves 1 bunch
  3. 3) Onion 1 large
  4. 4) Potato 1 large
  5. 5) Aubergines 2 small
  6. 6) Tomatoes 2 large
  7. 7) Green chillies 8
  8. 8) Cumin seeds 1 tsp
  9. 9) Ginger, chopped 1"" piece
  10. 10) Red chilli powder 1/2 tsp
  11. 11) Gram lentil(dal)4 tbsp
  12. 12) Water 1.5 glasses
  13. 13) A pinch of turmeric
  14. 14) Salt to taste
  15. 15) Oil to spray
Method
  • 1. Separate the spinach and the khatta leaves, wash well and chop finely.
  • 2. Chop the onions, potatoes and aubergines into small pieces and set aside.
  • 3. Soak the gram dal for an hour.
  • 4. Spray the pan with the oil and add cumin seeds, green chillies and ginger and saute for about a minute.
  • 5. Add the chopped onions, potatoes and aubergines.
  • 6. Saute the vegetables until done.
  • 7. Add the chopped spinach, khatta leaves, tomatoes, dal, spices, salt and water.
  • 8. Pressure cook on high flame until the first whistle goes off.
  • 9. Simmer until two or three whistles.
  • 10. Open the cooker after 10 minutes and mix well.
  • 11. Serve with quinoa or brown rice.
