Ingredients
  1. 1 lb. small potatoes
  2. oil for frying
  3. 2 onions
  4. ½ -inch fresh root ginger
  5. 2 green chillis
  6. 2 tomatoes
  7. 2 teaspoons ground coriander seeds
  8. I teaspoon turmeric powder
  9. 1 teaspoon garam masala
  10. 2 cartons yoghurt
  11. 1 oz. raisins
  12. salt to taste
  13. ½ teaspoon chilli powder
  14. 1 teaspoon sugar
  15. FOR THE GARNISH
  16. 1 tablespoon chopped coriander leaves
Method
  • Boil potatoes in salted water. When cooked drain, peel and fry in oil until slightly brown. Drain and set aside. Chop the onions finely; mince the ginger and chillis very finely and chop the tomatoes. Heat some more oil and fry the onions until soft but not brown. Add the ginger, ground coriander, turmeric and garam masala and fry for five minutes. Add chillis, tomatoes and yoghurt. Stir until the sauce is beginning to thicken, then add the raisins, salt and chilli powder. Simmer until the gravy is thick. Add the potatoes and sugar and cook for a minute or two. Serve hot, garnished with chopped coriander leaves.
