Cut the bitter gourd into round slices and remove the seeds.
Fry in 1 cup oil on a low flame. After few seconds, turn each piece around. Cook for few more seconds. Repeat this and cook till it turns crisp and golden brown. Remove with a slotted spoon
In the same oil, fry the onions cut lengthwise and remove. Now fry 6 green chilies,2tsp red chili powder,1tsp nigella seeds, 1tsp cumin,1/2tsp salt,1tsp turmeric and 1tsp all spice powder.
When the aroma is given off add 250g chopped tomatoes and cook until the oil floats on top.
Add the fried bitter gourd and onions, mix well
Sprinkle chopped coriander leaves and pour 4tbsps of tamarind pulp on top.
Cover and simmer for 10 minutes
