Cook fettuccine in boiling water in a large saucepan following packet direction, Drain se aside and keep warm.
To make sauce, melt butter in a large frying and cook red pepper and spring onion for 1-2 minutes. Add cream and bring to the boil then reduce heat and simmer for 5 minutes or until sauce reduce slightly and thickens.
Stir scallops into sauces and cook for 3 minute or until scallops are opaque season to taste with black pepper. Place fettuccine in a warm serving bowl, top with sauce and sprinkle with parsley.
