Ingredients
  1. 1 kg topside beef
  2. 2 cups of water
  3. 1 large onion
  4. 3 garlic cloves
  5. 1 carrot, chop
  6. 1 celery stick, chop
  7. Salt
  8. Pepper
  9. 3 tbsp cornstarch
  10. Mushrooms, thinly slice (optional)
Method
  • Rub beef with fresh ground sea salt and black pepper. In a large frying pan, on high heat brown each side of the beef and set aside.
  • In a large pressure cooker put the beef and add water, carrots, onion, garlic cloves and celery. On medium heat cook for 25 minutes for rare meat, 35 minutes for medium meat, and 45 – 50 minutes for well done.
  • Before opening the pressure cooker, page sure that the steam is fully removed, then slowly remove the lid.
  • Place the roast on the side.
  • To make the gravy, drain the juice in a small pot, separating it from the cooked vegetables. Add mushrooms and cook for 3 minutes. In a small cup mix ½ a cup of water with cornstarch and then add to the small pot. Mix for 5 minutes until the gravy has thickened.
  • Serve the roast beef with a side of mashed potatoes and yummy home made gravy.
