Ingredients
  1. ·20 fresh mushrooms
  2. ·3 tbsp. butter
  3. ·½ cup onions, finely chopped
  4. ·¼ cup red peppers, finely chopped
  5. ·½ cup crackers, finely crushed
  6. ·3 tbsp. Parmesan cheese, grated
  7. ·Parsley
Method
  • 1.Pre-heat over to 200 degrees C. Remove stems from mushrooms. Finely chop enough stems to measure ½ cup.
  • 2.In a large frying plan, melt butter and add chopped mushroom stems, onions, pepper and sauté until tender. Stir in cracker crumbs, cheese and seasoning; spoon into mushroom caps. Place on baking sheet, and make for 15 minutes
  • 3.Garnish with finely chopped parsley and serve.
