Ingredients
  1. Olive Oil 2 tbsp
  2. Bacon, chopped 2 rashers
  3. Onion 1
  4. Carrot 1
  5. Stalk Celery 1
  6. Garlic 1
  7. Beef mince 250 g
  8. Chicken livers 125 g
  9. Tomato paste 2 tbsp
  10. White wine ½ cup
  11. Chicken stock
  12. Pinch ground Nutmeg
  13. Black pepper
Method
  • Heat oil in large saucepan and cook bacon, stirring, over a medium heat for 3 minutes. Add onion, carrot, celery and garlic and cook, stirring for 5 minutes longer or until vegetable start to brown
  • Add beef mince to pan and cook, stirring to break up meat, for 5 minutes or until beef mince brown. Add chicken livers and cook for 2 minutes or until livers change color.
  • Stir in tomato paste, wine stock and nutmeg. Bring sauce to simmering, cover and simmer for 30-40 minutes or until sauce reduces and thickens.
