Ingredients
  1. • 5 tablespoons white balsamic vinegar
  2. • 3 tablespoons fresh lime juice
  3. • ½ tablespoon sugar
  4. • Salt to taste
  5. • 2 teaspoons red pepper flakes
  6. • ½ cup extra-virgin olive oil
  7. • 1 large firm ripe mango, peeled and cut into ½ -inch cubes
  8. • 1 pound pineapple, peeled cored and cut into ½ -inch cubes
  9. • 1 medium red onion, thinly sliced
  10. • 1 small red pepper, thinly sliced
  11. • 1 cup cilantro leaves, chopped
  12. Note: SERVES 4
Method
  • Whisk together vinegar, lime juice, sugar, salt, and red pepper flakes until sugar is dissolved. Add the oil in a thin stream, whisking until emulsified. Add remaining ingredients and toss until coated. Serve chilled.
