Potato And Rice Kibbeh

Kibbeh is a mixture of cooked minced meat, vegetables and flavors. Step # 1

Place boiled rice (2 cups) and boiled Potato (2 medium sized) in a bowl. Mash them both until a finely textured puree is formed. Make sure no lumps are left while mashing them well.


Step # 2

Meanwhile, heat oil in a medium pot, add butter (1 tea spoon) chopped onion (2 medium sized), garlic (1 clove, minced) and cook until tender.
Add minced lamb (1/2 kg) and cook until golden brown. Add raisins (1 Tbsp), toasted pine seeds (3 Tbsp) and stir until well combined.
Add salt (1/2 tea spoon), Black Pepper (Pinch), and splash of Soy sauce.
Remove pot from heat, mix in finely chopped dill leaves (اجوائن) ¼ cup.


 

Set aside the kebbeh mixture.

Step # 3

With wet hands, take medium sized pieces of the potato and rice mixture, form each portion into a ball shape, making a space in the center by pushing your finger through from one end.


 

Stuff with some meat mixture, close firmly to form a ball then flatten it slightly into small patties.

Fry kibbeh by batches in deep hot vegetable oil until golden brown.


Step # 4

Serve hot with green salad and yogurt.
