Ingredients
  1. Peppered tuna with olive and herb salsa
  2. (portions/serves: 8)
  3. Tuna seasoning:
  4. 1) Olive oil. 1 tbsp
  5. 2) Zest and Juice of organic lime. 1tbsp
  6. 3) Cracked mixed pepper corns. 1 Each
  7. 4) Tuna steaks. 50 Each
  9. For olives & herb Salsa
  11. 1) Extra-virgin olive oil. 1tbsp
  12. 2) Black & green olives. 2 Each
  13. 3) Zest & juice of organic lemon. 1tbsp
  14. 4) Chopped parsley 2tbsp
  15. 5) Chopped coriander 2tbsp
  16. 6) Capers 1 Each
Method
  • 1) Put the olive oil in a large/shallow bowl, than add the lime zest and juice and pepper corns & than add the tuna and toss to coat.
  • 2) Heat a non-stick griddle pan. Cook the tuna steaks, two at a time. For 2-3 mins on each side.
  • 3) Put all the ingredients for the salsa in a bowl and mix together.
  • 4) Season to taste and mix well, than server with the tuna.
