Ingredients
  1. 1) 6 to 8 boneless chicken breast halves
  2. 2) salt and pepper -- to taste
  3. 3) 2 tablespoons flour
  4. 4) 2 tablespoons olive oil
  5. 5) 12 ounces mushroom -- sliced
  6. 6) 4 to 6 cloves garlic -- crushed
  7. 7) 1/2 cup balsamic vinegar
  8. 8) 1/2 cup chicken broth
  9. 9) 1 bay leaf
  10. 10) 1/4 teaspoon thyme
  11. 11) 1 tablespoon flour
  12. 12) 1 tablespoon butter
Method
  • 1. Rinse chicken and pat dry.
  • 2. Dredge in mixture of salt, pepper and 2 tablespoons of flour.
  • 3. Brown chicken on 1 side in oil in skillet for 2 to 3 minutes.
  • 4. Turn chicken.
  • 5. Add mushrooms and garlic.
  • 6. Cook for 3 to 5 minutes or until chicken is brown.
  • 7. Stir in vinegar, broth, bay leaf and thyme.
  • 8. Cook, covered, over medium heat for 10 minutes or until chicken is tender.
  • 9. Remove chicken to serving platter, keep warm.
  • 10. Stir in 1 tablespoon flour and butter.
  • 11. Cook for 7 minutes, stirring constantly.
  • 12. Discard bay leaf.
  • 13. Pour over chicken.
  • 14. Serve with wild rice.
