Ingredients
  1. • 1tbsp olive oil
  2. • 1 onion (finely chopped)
  3. • 2 cloves garlic (crushed)
  4. • 1tsp ground cumin
  5. • 1tsp ground coriander
  6. • 1tsp paprika
  7. • 400g red kidney beans
  8. • Flour (for dusting)
  9. • Vegetable oil (for frying)
  10. • Nan (to serve)
Method
  • Heat olive oil in a pan and fry onion for about 8 minutes until softened.
  • Add garlic, cumin, coriander, paprika and kidney beans. Cook for 5 minutes.
  • Put mixture into a bowl and mash until it forms a coarse paste. Set aside to cool.
  • When cool, place in the refrigerator for about 30 minutes, until mixture is firm. Using floured hands, form 16 walnut-sized balls and roll in flour.
  • Fry in batches for 8 minutes. Drain on kitchen paper.
  • Serve with Nan and raita.
