Ingredients
  1. • Undercut steak pieces 1 kg
  2. • Yogurt 100 grams
  3. • Papaya paste 3 tbsp
  4. • Onion (fried and ground) 1
  5. • Ginger/garlic paste 2 tbsp
  6. • Roasted and crushed cumin seeds 1 tsp
  7. • Crushed red chillies 1 tsp
  8. • Hot spices powder 1 tsp
  9. • Turmeric powder ½ tsp
  10. • Roasted & ground Bengal grams 4 tbsp
  11. • Mustard oil 4 tbsp
  12. • Salt to taste
Method
  • 1. Marinate steak pieces with papaya paste for at least 4 hours.
  • 2. Mix steak pieces, onion, yogurt, ginger/garlic, mustard oil, turmeric powder, hot spices powder, red chilies, cumin seeds, grams and salt in a bowl.
  • 3. After 1 hour you can either put them on skewers and cook them over coals, steam and fry them You can also cook it in the oven.
  • 4. Garnish with sliced lemon, coriander leaves, green chilies and sliced onion.
  • 5. Serve delicious Bihari Boti with ‘roti, salad, raita and tamarind/mint chtuney.

Before steaming, It is better to put masala on Behari Boti meat and then leave it for some minutes after adding lemon.

Zulekha i have one advice for you. Keep the botis in masala and left for one hours then add lemon and left 20 minutes then steam them.. try and coment back

Any idea for the preparation of behari boti without using raw papaya in it? Actually no one like to eat raw papaya because it disturb the digestive system but behari kabab is the most special dish in bakra eid.
