Biryani Recipe

Mutton Biryani is a scrumptious, aromatic, and delicious meat and rice mixed dish, originating from Muslims of South Asia. Biryani is an Urdu word derived from Persian language. Meat and rice are the main ingredients of this dish. Chicken, Mutton, or beef meat pieces can be used to prepare biryani. Ingredients of Mutton Biryani include salt, pepper, green chilies, coriander, mint leaves, nutmeg, mace, cloves, cardamom, cinnamon, bay leaves, onions, tomatoes, ginger, and garlic. Potatoes can be added to biryani depending on your taste and preference. Mutton Biryani can be cooked at home using the method listed here. You can serve biryani with raita, salad and cold drink at home.

Ingredients
  1. • Rice 1/2 kg
  2. • Mutton 1/2 kg
  3. • Ghee 1/2 cup
  4. • Curd 1/4 kg
  5. • Milk 1/2 cup
  6. • Garlic paste 1/2 tsp
  7. • Ginger paste 1/2 tsp
  8. • Cinnamon 1" piece
  9. • Green cardamoms 3-4
  10. • Black cardamoms 2-3
  11. • Cloves 3-4
  12. • Kewra essence 1/4 tsp
  13. • Onions 3-4
  14. • Salt to taste
Method
  • Heat 4 tbsps. ghee and fry half the onions cut into slices till golden brown.
  • Grind and mix with the cleaned, cubed mutton in which all other ingredients have been added except milk and kewra.
  • Keep aside for an hour. Now boil until the curd has dried up and meat is tender.
  • Add a little ghee and fry till brown.
  • Boil rice until half cooked. Remove.
  • Heat ghee and fry remaining onions, add the half cooked rice.
  • Top with meat mixture. Mix the milk with a little saffron and a few drops of kewra.
  • Pour over the biryani.
  • Remove from flame, seal the lid with dough and put live coals on top till done.
