Kachay Gosht Ki Biryani Recipe in Urdu

Kachay Gosht ki Biryani – Its belongs to the Hyderabadi cuisine. It is cooked with beef, all spices, and Basmati rice. The beef is marinated with yogurt, ginger / garlic paste, red chili powder, salt, garam masala, white pepper to blend the flavor of Biryani spices in meat perfectly well. Kachay Gosht ki Biryani does not require meat to be cooked before layering. First a layer of meat mixture is placed then the boiled rice is layered and on top green chilies, coriander, yellow color, mint leaves are sprinkled. Kachay Gosht ki Biryani takes almost 30 to 40 minutes on steam to cook. This variation of biryani is less time consuming and is different in taste then your traditional biryani. Kachay Gosht ki Biryani can be your ultimate choice when it comes to serve your guests on Eid ul Adha. You can prepare it for Eid dinner parties and serve it with raita.

کچے گوشت کی بریانی (INGREDIENTS)
  1. گوشت،گائے کا۔ایک کلو۔
  2. باسمتی چاول۔ تین پاؤ۔
  3. دہی۔ایک پاؤ۔
  4. کچا پپیتا،پسا ہوا 2 کھانے کے چمچے۔
  5. خشخاش ۔پسی ہوئی۔1 کھانے کے چمچہ۔
  6. سرخ مرچ پسی ہوئی۔2 کھانے کے چمچے۔
  7. جائفل ۔پسی ہوئی۔چوتھائی چائے کا چمچہ۔
  8. جاوتری۔پسی ہوئی۔چٹکی بھر۔
  9. ادرک لہسن کا پیسٹ۔2 چائے کے چمچے۔
  10. نمک۔ایک کھانے کا چمچہ۔
  11. سفید مرچ۔پسی ہوئی ۔1 چائے کا چمچہ۔
  12. تیز پات،1 عدد۔لونگ،4 عدد۔دارچینی،2 عدد۔
  13. آئل یا گھی۔ایک پاؤ۔
  14. ہری مرچ۔4 عدد۔باریک کٹی ہوئی۔
  15. ہرا دھینا اور پودینہ تھوڑا سا باریک کٹا ہوا۔
  16. ٹماٹر 2 عدد۔کٹے ہوئے۔
METHOD
  • گوشت کو ایک انچ موٹے اور 3 انچ لمبے ٹکڑوں میں کاٹ لیں۔اس کے بعد گوشت دھو کر پانی اچھی طرح نکال کر تمام مصالحے سوائے تیز پات،لونگ اور دارچینی کے گوشت میں اچھی طرح مکس کرکے کم از کم 4 گھنٹے کے لئے رکھ دیں۔ چاول کو 20 منٹ بھگو کر رکھیں،پھر چاول کو اُبلتے ہوئے پانی میں نمک ڈال کر صرف 5 منٹ بوائل کرکے چھلنی میں ڈال دیں اور 5 منٹ تک ٹھنڈا ہونے دیں۔ ایک بڑی دیگچی میں (جتنا گوشت اور چاول ہیں دیگچی اُس سے ڈبل بڑی ہو) مصالحہ ملا گوشت پھیلا کر بچھائیں،اور اُس کے اوپر بوائل چاول اچھی طرح پھیلا کر ڈال دیں،اوپر سے ہری مرچ،پودینہ، ہرا دھنیا اور ٹماٹر ڈال کر ڈھکن بند کردیں اور ڈھکن پر کوئی وزنی چیز رکھ دیں کہ بھاپ باہر نہ نکلے اور 30 منٹ تک دھیمی آنچ پر پکنے دیں۔30 منٹ کے بعد دیگچی کو کسی کپڑے سے پکڑ کر چاولوں کو اچھی طرح اُلٹ پلٹ کریں اس طرح کے گوشت اوپر آ جائے مگر ہلکے ہاتھ سے کریں ورنہ چاول ٹوٹ جائیں گے۔اب اگر پانی باقی ہو تو مزید دم پر رکھیں اور اگر پانی باقی نہ ہو اور چاول سخت رہ گئے ہوں تو پانی کا ہلکا سا چھڑکاؤ کریں اور دم پر رکھ دیں۔مزیدار کچّے گوشت کی بریانی تیار ہے۔
