Ingredients
  1. 1 kg mixed vegetables (any, except ladies-finger, bitter gourd and yam)
  2. 2 tblsps oil
  3. ¼ tsp mustard seeds
  4. a few curry leaves
  5. a few dried red chillies
  6. 2 cups rice
  7. 1 cup dal of choice (except urad)
  8. a small piece of ginger (crushed)
  9. salt and turmeric to taste
  10. coriander leaves
Method
  • Wash and cut the vegetables into small pieces.
  • Heat oil and fry the mustard seeds, curry leaves and red chillies.
  • When the mustard seeds begin to crackle, add the vegetables and stir. After about 3 minutes, add the rice and dal, ginger, salt and turmeric. Stir well. Put is 5 cups of water,cover and cook. When the rice is done, remove from fire. Garnish with coriander leaves and serve.
