Bombay Chicken Biryani Recipe

Bombay Chicken Biryani is the most popular spicy South Asian mixed rice dish. It originates from Muslims of subcontinent. It is prepared using chicken pieces, rice, salt, pepper, green chilies, all spices, yogurt, herbs, dried prunes, raisins, pomegranate seeds, coriander, and cloves. Ingredients
  1. Rice 1 kg
  2. Chicken 1 kg
  3. Cumin seeds 20 gm
  4. Black pepper 5 gm
  5. Clove 5 gm
  6. Cinnamon 5 gm
  7. Black cardamom 4
  8. Green cardamom 4
  9. Chinese salt 10 gm
  10. Turmeric 1 tsp
  11. Crushed red pepper 20 gm
  12. Yellow color 20 gm
  13. Plum 10
  14. Chaat masala 2 tsp
  15. Salt to taste
  16. Tomatoes 250 gm
  17. Coriander leaves ½ bunch
  18. Mint leaves ½ bunch
  19. Green chilies 20 gm
  20. Ginger garlic paste 2 tsp
  21. Lemon 2
  22. Yogurt 250 gm
  23. Fried onion 50 gm
  24. Oil 250 ml
Method
  • Wash 1 kg rice and soak in water. Then boil rice till 3/4th done.
  • Heat oil in a pan, add 2 tsp ginger garlic paste and sauté till golden brown. Now add 1 kg chicken and fry well.
  • Then add cumin seeds, cloves, cinnamon, black pepper, black cardamoms, green cardamoms, turmeric, Chinese salt, crushed red pepper, salt, yellow color and yogurt. Mix well.
  • Add 1 cup of water and cook for a few minutes.
  • Separately chop 250 gm tomatoes, ½ bunch of coriander leaves and ½ bunch of mint leaves.
  • In a pan heat a little oil, add chopped tomatoes, coriander and mint leaves. Fry well.
  • Then add 2 tsp chaat masala and 10 dried plums to it. Fry very well. Also add juice of 2 lemons and mix well.
  • Spread tomato mixture on top of chicken mixture; now make a layer of boiled rice on top.
  • Sprinkle 50 gm fried brown onion on top and simmer on low flame till done.
  • Dish it out, serve with Raita.
