Ingredients
  1. Carrots, grated 1 kg
  2. Basmati rice soaked 1/4 cup
  3. Milk 1 litre / 4 1/4 cups
  4. Almonds, blanched and split 20 gm/4 tsp
  5. Clarified butter (ghee) 100 gm/7 tbs
  6. Khoya, grated 60 gm
  7. Raisins 15 gm/5 tbs
  8. Sugar 240 gm/1 cup
Method
  • Boil milk in a kadhai.
  • Add the grated carrots and basmati rice cook on medium heat, stirring constantly until the milk has thickened.
  • Stir in sugar and cook till most of the moisture has evaporated.
  • Add the ghee and stir-cook for 5 minutes. Remove from fire and mix in the khoya.
  • To Serve: Garnish with almonds and raisins and silver leaf.
