Prepare the carrots if necessary, then grate them and put into a heavy pan with the milk. Cook the mixture steadily, stirring frequently with a spoon until it becomes almost solid (this can take up to an hour). Now add the sugar, the golden syrup, butter and sultanas and cook, taking care to stir continuously, until the mixture starts to leave the sides of the pan. This will take approximately 15-20 minutes.
Grease a shallow tin and spread the mixture into it evenly. Sprinkle with the crushed cardamom seeds and decorate with a few blanched almonds, if desired.
