Ingredients
  1. Rice ½ kg
    Chicken                700 gm
    Yellow food color 1 pinch
    Onions  (brown)               2
    Potatoes 2-3
    Bay leaves 2-3
    Green chilies 2-3
    Green coriander ½ bunch
    Ginger  1 inch
    Yogurt  1 cup
    Tamarind paste ½ cup
    Mint leaves ½ cup
    Coriander powder 1 tsp
    Turmeric powder 1 tsp
    Cumin seeds  1 tsp
    Chaat masala 1 tsp
    Lemon juice 1 tbsp
    Nutmeg and mace ½ tsp
    Garlic (chopped) 2 tbsp
    Red chili powder 2 tbsp
    Oil 3 tbsp
    All spices as required
    Salt to taste
Method
  • To prepare rice wash them and soak them in soak them for 1-2 hours. Add in 2-3 bay leaves, 1 tsp cumin seed and salt  and boil the rice. Drain the water and keep the rice aside. To prepare korma, boil some potatoes with a pinch of yellow food color and salt. In a blender put ginger, 2 tbsp garlic, ½ bunch green coriander and 2-3 green chilies along with some water. Blend everything together. Now take 3 tbsp oil in the pan, and sauté some all spice powder. Add in onion and fry it till it is golden brown. Then add in the green paste and sauté it. Add in 700 gm chicken and cook it. Add in 2 tbsp red chili powder, 1 tsp coriander powder, 1 tsp turmeric, ½ tsp crushed nutmeg and mace in some yogurt. Add the sugar in the pan and sauté it. When the masala is cooked and meat tender add in tamarind paste. Mix everything and remove it from the stove. To put the layers in the pan, first put the layer of qorma then a layer of rice. Again put qorma, fried onion, green coriander and ½ cup mint leaves. Add in rice and the put potatoes. Dish it out and sprinkle some chat masala on it and serve.
