Ingredients
  1. 1) 15 ounces kidney beans, drained and rinsed
  2. 2) 1 garlic clove
  3. 3) 1 medium onion
  4. 4) 1 teaspoon italian seasoning
  5. 5) 2 1/2 lbs skinless chicken breasts
  6. 6) 8 ounces tomato sauce
  7. 7) 1/4 cup vinegar (cider or white)
  8. 8) 1 teaspoon sugar
  9. 9) salt and pepper (to taste)
Method
  • 1. Dice tomatoes and crush the garlic.
  • 2. Chop the chicken
  • 3. In large pot or pan, cook chicken until almost done.
  • 4. Add tomato sauce, vinegar, onion, garlic, seasoning, sugar, salt and pepper.
  • 5. Simmer for about 30-40 minutes or until chicken is tender.
  • 6. Add kidney beans and simmer for 5-10 more minutes.
