Ingredients
  1. 3 small OR 2 medium onions
  2. 1 medium- small size chicken
  3. 1 teaspoon cumin seeds(sabat/safaid zeera)
  4. ½teaspoon turmeric(haldi)
  5. ½ teaspoon chili powder(lal mirch powder)
  6. ¾ -1 teaspoon salt
  7. 1tea spoon coriander powder(pissa hua dhania)
  8. 7-9 cloves OR 1½ table spoon of garlic (lehsan k 7-9 joay ya 1½ Tbl spoon)
  9. 1 inch OR ½ table spoon ginger (1 inch ya ½ Tbl spoon adrak)
  10. 1 ½ habanero chili or green chilies(habanero / hari mirchain)
  11. 1 ½ teaspoon tomato paste
  12. ¾ to 1 cup water,
  13. fresh coriander (hara dhania)
  14. Garam masala:
  15. 5 cloves (laung)
  16. ½ teaspoon whole black paper(sabat kali mirch)
  17. 1 black-cardamom(kali/bari ellaichi)
  18. 1 inch cinnamon (dar chini)
  19. 1 tsp cumin seeds
Method
  • Brown sliced onions in oil in a pressure cooker, when they turn pink add 1cup water and give pressure, for 3-4 min
  • Meanwhile crush ginger, garlic and green/habanero chilies in pestle and mortar it will be 2 table spoon after crushing.
  • Grind the garam masala in grinder to make fine powder.
  • Now open pressure cooker and dry the water and when oil starts to separate then add chicken.
  • With chicken add cumin seeds,turmeric, chili and coriander powder, salt and ½ tsp freshly ground Garam masala.
  • Add freshly crushed garlic, ginger and crushed habanero/green chilies and roast it well.
  • Cook covered so that it is cooked from inside, mix and roast it well.
  • No need to add water bcoz when chicken is washed it retains little water in it which will be enough to cook it.
  • Roast it till all the water is dried, then add tomato paste, mix and roast well.
  • Then add ¾ to 1 cup water to make the gravy.
  • Bring it to boil well. Add fresh coriander and turn the heat off.
  • This curry has a thick and rich gravy; appealing to eyes and good to taste.
  • This chicken curry recipes goes well with pulao for serving the guests.
  • IMPORTANT NOTES:
  • Never use ready made garam masala, always grind it fresh.
  • Don't replace tomato paste with fresh tomatoes, it will change the taste of the dish absolutely.
