Ingredients
  1. 200gm chocolate biscuits, crushed
  2. 125gm butter
  3. ½ cup ground almonds
  4. Filling :
  5. 250gm cream cheese
  6. ½ cup icing sugar
  7. 1 tbsp lemon juice
  8. 1 tsp vanilla essence
  9. 300ml cream
  10. Topping :
  11. 425gm can of peach halves
  12. 100gm dark chocolate, melted
  13. ½ cup almonds, blanched, flaked and toasted
Method
  • Combine biscuits, butter and almonds and mix together.
  • Press into the base and up the sides of a greased flan tin.
  • Bake at 180°C for 10 minutes.
  • Cool for the filling, beat cream cheese, icing sugar, lemon juice and essence. Fold in the cream.
  • Spread filling, chill for a few hours till set.
  • Slice and drain the peaches and dry well.
  • Dip one end of the peaches in chocolate, place on greaseproof paper to set.
  • Before serving, decorate the flan with the peaches in a circle and put the flaked almonds in the middle.
