Ingredients
  1. 1/2kg Amaranth Leaves
  2. 1 Tomato chopped
  3. 2 Potatoes chopped in cubes
  4. 4 Green chilies
  5. 1 cup Onion coarsely sliced
  6. 1/4 cup Oil
  7. 1 tsp White cumin seeds
  8. 1 tsp Garlic chopped
  9. 1 tsp heaped Crushed red chili
  10. 3/4 tsp Salt
Method
  • Heat ¼ cup oil in pan, add 1 tsp cumin seeds with sliced onion, fry till transparent, add 1 tsp crushed garlic and fry for 2minutes.
  • Add ¾ tsp salt, 1 tsp crushed red chili and chopped tomato, fry for 5 minutesAdd ¼ cup water with potato cubes and chopped amaranth leaves.
  • Cover and cook on low flame for 20 minutes till potatoes tender. Serve with puri.
