Coconut Chicken recipe by Shireen Anwar. This delightful Main Course recipe of Coconut Chicken can be ready in approximately 30 Minutes and good to serve around 2-4 People. Follow all the steps recommended by Chef to get a perfect dish. Hide

INGREDIENTS

yogurt1 cup
olive oil 1 tbsp
garlic1 clove
turmeric powder1/4 tsp
crushed red chilies 1/4 tsp
garam masala1/4 tsp
cumin1/2 tsp
salt 1/2 tsp
 juice 1 lemon
Chicken drumsticks1.5 to 2 pounds
 sliced onion 1
coconut milk1cup
Fresh coriander   1 tbsp

METHOD

In a large bowl combine 1 cup yogurt, 1tbsp olive oil, 1 clove of garlic, ¼ tsp turmeric,1/ 4 tsp crushed red chili, ¼ tsp garam masala, ½ tsp salt, ½ tsp cumin & juice of 1 lemon. Place chicken in marinade and toss to coat. Cover and refrigerate 8 hours or overnight.2.   Remove the chicken from the marinade. Reserve marinade.3.   In a large pan, cook chicken over medium heat until it browns slightly.4.   Add 1 onion and cook, Pour 1 cup coconut milk and marinade over the top, stir. Bring to a boil and then reduce heat.Simmer for 30-35 minutes or until chicken is cooked through.5.   Stir in coriander just before serving.
