Ingredients
  1. 2 kg chicken, cooked
  2. Paprika
  3. 1 carrot, sliced and cut into flowers and 1 stick celery, cut into thin strips, to garnish
  4. CURRY MAYONNAISE:
  5. 60 ml Mayonnaise
  6. 2 tablespoons lemon juice
  7. 2 tablespoons single cream
  8. 5 teaspoons tomato puree (paste)
  9. 1 teaspoon curry paste
  10. 2 tablespoons mango chutney
Method
  • Remove the chicken meat from bones, discarding skin and bones. Divide meat into neat pieces and place on serving platter.
  • To make the curry mayonnaise, put all the ingredients into a blender or food processor and work until smooth. Pour over the chicken and dust with paprika. Serve garnished with carrot flowers and celery.
