Ingredients
  1. For the pancakes
  2. • 1/3 cup plain flour (maida)
  3. • 1/3 cup cornflour
  4. • 1/3 cup milk
  5. • 1/3 cup water
  6. • 2 tsp melted ghee or butter
  7. For the pear filling
  8. • 6 fresh pear or 1 small can (450 grams) pears
  9. • 3 tbsp sugar (for fresh pears only)
  10. • 1 tsp lemon juice
  11. • 1/2 tsp grated lemon rind
  12. For the topping
  13. • 100 gms (4 oz.) fresh cream
  14. • 1 1/2 tbsp sugar
  15. • 25 gms grated bitter chocolate
  16. • 2 tbsp almond (badam) slivers
  17. • Vanilla Ice-cream to serve
Method
  • For the pancakes
  • Mix the ingredients and prepare pancakes on a non-stick frying pan using ghee.
  • For the pear filling
  • • Peel, core and slice the pears.
  • • Add the sugar, lemon juice, lemon rind and 3/4 teacup of water and cook until soft.
  • • Chop finely. Keep aside the juice.
  • How to proceed
  • • Beat the cream with the sugar.
  • • To the chocolate, add 1 tablespoon of the cream and heat till it melts. Mix with the rest of the cream.
  • • Fill each pancake with some pear filling along with a little of its juices.
  • • Place the pancakes on a baking dish and spread the sweetened cream on them. Sprinkle the sliced almonds on top and bake in a hot oven at 200 degree C (400 degree F) for 5 minutes.
  • • Serve warm with vanilla ice-cream.
