INGREDIENTS

- Flour 2 cups heaped

- Salt 1 tsp leveled

- Oil 7 tbsp

- Water ½ cup

- Filling

- Chana ki daal boiled 1 cup till tender, grind and mix with ½ tsp salt, 1 tsp crushed red pepper

METHOD

Crispy Kachori are very common, people often take this snakes as lunch, it is also used in Ramada, Iftari. you can take Crispy Kachoris with Daal, Aaloo, Channa Salans.

In a bowl take salt, oil and water, mix add in flour, knead to a smooth dough, add in another tsp of oil, knead well until smooth, divide into 12 equal portions, shape them into balls, leave them covered for 15 minutes, take 1 ball in your hand, spread a little, put half tsp filling, again reroll into a ball, out oil on a flat surface, spread the kachori into a saucer size, deep fry on medium flame till golden brown.

I just make this type of crispy kachoris but my kachoris are not much blowing like the kachori in this image, I think I get some mistake.

last time my elder sister tried to made crispy kachori but she got success to make papar of kachori. she prepared more crispy and also it was not success to blow it.

I am not hundred percent success to fill daal in this kachori because when i fry it, the daal is came outside from this kachori but i made it so crispy.

In the preparation of kachori flour should be very smooth and soft and in the frying pan, the fire of the burner should be very slow than you will prepare blowing kachoris.

I tried the recipe of crispy but i failed because it is not much blow like a gol gappa although it was very crispy. Please some one tell me what mistake i conduct?
