Ingredients
  1. 4 lamb's kidneys 2 onions
  2. 2 cloves garlic
  3. 3 large tomatoes oil for frying
  4. 1 teaspoon garam masala
  5. 1 teaspoon turmeric powder
  6. ½ teaspoon chilli powder
  7. ½ teaspoon ground cummin seeds
  8. 1 teaspoon ground coriander seeds
  9. Salt to taste
  10. FOR THE GARNISH
  11. Wedges of tomato
Method
  • Wash, trim and clean the kidneys. Cut into quarters. Slice onions, Crush garlic, chop tomatoes. Fry the onion and garlic for five minutes. Add chopped tomatoes, spices and salt and fry for 10 minutes. Put in the kidneys and cook until tender. Garnish with tomato and serve with rice and chappatis or puns.
