Ingredients
  1. 1 large onion, finely minced oil for frying
  2. 1 clove garlic, crushed
  3. 1 teaspoon turmeric powder 1 teaspoon chilli powder
  4. 1 teaspoon ground ginger
  5. 2 teaspoons ground coriander seeds 2 ½ oz. can tomato pure salt to taste
  6. 1 pint (U.S. 21 cups) water 1 oz. creamed coconut
  7. 8 oz. shelled peas
  8. 6 hard-boiled eggs, cut in halves lengthwise
Method
  • Fry the onion in some oil until golden brown. Add garlic, fry for two minutes and add the spices. Fry well before adding the tomato purée, salt and water. Cook till gravy begins to thicken then add the coconut and when dissolved adds the peas and eggs. Cook for another 10 minutes.
