Ingredients
  1. 12 oz. uncooked lamb, minced 1-inch fresh root ginger
  2. 2 cloves garlic
  3. 1 green chilli
  4. ½ teaspoon ground cummin seeds
  5. ½ teaspoon ground coriander seeds ¼ teaspoon turmeric powder
  6. ½ teaspoon chilli powder
  7. ¼ teaspoon ground cinnamon ¼ teaspoon ground cloves
  8. 2 slices white bread, grated
  9. Salt to taste
  10. 1 egg yolk
  11. 6 hard-boiled eggs
  12. Oil for frying
Method
  • Put minced meat into a bowl. Finely mince ginger, garlic and chilli and add to the meat with all the ground spices, breadcrumbs, salt and egg yolk. Mix thoroughly. Shell the hard-boiled eggs. Divide meat into six equal portions. Flatten each portion in the palm of the hand. Put a hard-boiled egg in each centre and carefully work the meat up around the egg until enclosed. Heat some oil in a pan and deep fry till golden brown. Garnish with onion rings and serve with chutney.
