Cut 250fg tofu into chunks and slice the eggplant
In a bowl mix together 1 egg,1 cup flour,10 basil leaves,2tsp crushed black pepper,1tsp salt, 1tsp cumin and a dash of oregano.
Coat the tofu and eggplant in the batter and dredge in breadcrumbs
To prepare the sauce heat 1tbsp oil in a skillet. Add 1 cup tomato paste,1/2 cup tomato ketchup,1/2tsp salt, 1/2tsp sugar and 2 freshly crushed red chilies. Cook for a minute
Add the fried eggplant and tofu. The Eggplant and Tofu frittatas are ready to be served
