Top and tail the okra. Chop onions and chillis finely. Heat a little oil and fry onions for two minutes. Add okra and tomato purée and cook for 15 minutes. Put in the chillis, sugar, coriander and salt. Remove and spread mixture in a baking dish. Break the eggs on top of the okra mixture, cover and bake in a very moderate oven (300° F — Gas Mark 3) for 15 minutes or until eggs are set.
Serve with plain boiled rice, garnished with curry leaves.
