Ingredients
  1. 4 oz. wholemeal flour
  2. 4 oz. plain flour
  3. 1 teaspoon salt
  4. 2 teaspoons melted butter
  5. 1/4 pint (U.S. 2/3 cup) warm water oil for deep frying
Method
  • Mix the flour and salt. Make a depression in the centre and add the butter. Knead to a stiff dough by gradually adding water. Knead for 10-15 min¬utes till the dough is soft and pliable. Cover and set aside for 15 minutes. Now divide the dough into 16 equal portions and roll into thin round pancakes. Heat some oil in a frying pan and fry the puns quickly, turning during cooking. Press sides of the puns with a fish slice whilst frying and splash the tops with hot oil to encourage them to puff up. Drain when golden brown on both sides.
  • Note: Preparation time 20 minutes, Cooking time 30 minutes, To serve 4
