Ingredients
  1. Mince½ kg
    Saltto taste
    Garlic2 cloves
    Ginger2 inches piece
    Chili powder1 tbsp
    Onion1 medium
    Onion fried1
    All spice 1 tbsp
    Nutmeg mace powder½ tsp
    Cumin seeds crushed1 tsp
    Green chilies chopped2 – 3
    Coriander leaves¼ bunch
    Kidney’s fat100 gm
    Stringas required
    Butter100 gm
    Papaya paste2 tbsp
    Meat tenderizer1 tbsp
Method
  • In a  food processor chop together ½ mince meat , a piece of ginger,2 cloves of garlic,1 onion and 2tbsp papaya paste along with 1tbsp meat tenderizer
    Now mix in 1tbsp all spice powder, salt as required, 1tsp crushed cumin,2-3 green chilies, 1 fried brown onion, 1/4bunch chopped coriander and 100g kidney fat.Chop again.
    Shape the mixture into kebabs and thread onto to metal skewers and grill over hot
    Coal.
    When cooked from all sides and grill marks appear, melt 100g butter in a pan and fry he nutmeg and mace powder.
     Tie the kebabs with a  thread  and fry in the butter over a  high flame.
