Ingredients
  1. o 400 gms Brinjals
  2. o 1/2 cup Dry Coconut (grated)
  3. o 1 large Onion
  4. o 1 tsp Garlic Paste
  5. o 1 tsp Ginger Paste
  6. o 2 tsp Cumin Seed Powder (roasted)
  7. o 4 tsp Coriander Powder (roasted)
  8. o 1/2 tsp Turmeric powder
  9. o 1 tbsp Coriander Powder
  10. o 1 tsp Red Chilli Powder
  11. o 3-4 Curry Leaves
  12. o 4-5 twigs Coriander Leaves
  13. o Oil for frying
  14. o Salt to taste
  15. • -tamarind paste( I like to add tamarind since i belive it gives an excellent taste together with brinjals)
Method
  • 1. -Grind roasted cumin seed powder, coriander and coconut.
  • 2. -Slit the brinjals, place them in salted water and fry till it turns soft.
  • 3. -Heat the oil.
  • 4. -Fry onions, ginger paste, garlic paste till it turns transparent.
  • 5. -Add turmeric powder, salt and grinded mixture.
  • 6. -Mix red pepper and add fried brinjals.
  • 7. -Add Tamarind paste
  • 8. -Add ¼ cup of water and boil it for 5 minutes.
  • 9. -Garnish with fresh coriander leaves.
  • 10. -Bhagaray Baingan is ready to serve.
