Ingredients
  1. 2 large grapefruit.
  2. 1 pineapple,peeled,cored and cut into 1-inch pieces (4-5 cups).
  3. 1 14-ounce can hearts of palm,drained and sliced.
  4. 2 firm ripe bananas, sliced.
  5. 1 large head bostorn lettuce, torn.
  6. 1/4 unsweetened coconut chips, toasted.
Method
  • 1:- Slice both ends off the grape fruit. With a sharp knife remove the peel and white pith; discard. Working over a medium bowl, cut the segments from their surrounding membranes. Add pineapple, heart of palms, bananas and 3 tablespoon of the vinaigrette; gently toss to combine.
  • 2:- Arrange lettuce on a large serving plate or in a shallow serving bowl. Drizzle with the remaining vinaigrette. Arrange the fruit salad over the lettuce and sprinkle with coconut. Garnish with mint, if desired.
