Ingredients
  1. Wraps  8-10
    Boiled potatoes 250 gm
    Peas ½ cup
    Chopped carrots 1
    Chopped capsicum 1
    Onion (chopped) 1
    Red chili flakes 1 tbsp
    Garlic paste 1 tsp
    All spice powder 1 tsp
    Carom seeds ½ tsp
    Cumin seeds (roasted)1 tsp
    Black pepper (crushed)1/2 tsp
    Green coriander ½ bunch
    Green chilies 4-5
    Oil to fry
    Salt to taste
    For fruit Chaat:Mix fruits ½ kg
    Boiled chick peas 150 gm
    Boiled potatoes 1-2
    Orange Juice ½ cup
    Yogurt ½ cup
    Tamarind paste 3-4 tbsp
    Chaat masala 1 tbsp
    Brown sugar 2-3 tbsp
    Black Salt ½ tsp
    Salt to taste
    For Pakoray:Mix vegetables 500 gm
    Gram flour 2 cup
    Yogurt ½ cup
    Red chili powder 1 tbsp
    Turmeric powder ½ tsp
    All spice powder ½ sp
    Baking soda ½ tsp
    Oil 4 tbsp
    Salt to taste
Method
  • To prepare Pakoray:Cut 500 gm mix vegetables.
    Take some salt, ½ tsp baking soda, 1 tbsp red chili powder, ½ tsp turmeric powder and ½ tsp all spice powder in a mixing bowl and mix everything with the help of hand. Now add in gram flour and mix it well to make a good batter.
    Heat 4 tbsp oil in the pan and dip the mixed vegetables in the batter and fry it till golden brown. Once fried keep it aside.
    To prepare fruit chaat:Cut ½ kg mixed fruits into small chunks.
    Now take 3-4 tbsp tamarind paste, ½ cup orange juice, 2-3 tbsp brown sugar, ½ cup yogurt, 1 tbsp chaat masala, ½ tsp black salt and salt in a mixing bowl. Beat all the ingredients to make a sauce.
    Take a deep serving dish and add in all the fruit chunks, potatoes and chick peas in it. Pour over the sauce fruit chaat is ready.
    For filling:Boil and mash 250 gm potatoes and chop carrot and capsicum. Add in ½ cup peas.
    Take Salt, 1 tbsp red chili flakes, ½ bunch green coriander, 4-5 green chilies, onion, roasted and crushed cumin seeds and ½ tsp carom seeds in a mixing bowl and mix everything together. Mix potatoes in it. Mix mashed potatoes in it.
    Fill in the samosas with the filling and fold it. Fry them on a low flame till golden brown.
