Mix both types of flour together on to a pastry board or into a mixing bowl. Mix in one tablespoon of melted butter and the salt. Gradually add enough water and knead sufficiently to make a soft dough. Cover and set aside for 10 minutes. Divide the dough into eight portions. Roll each portion into a ball, flatten between the palms of your hands and roIl out into a thin circle on the board. Brush with a little melted butter and fold over into a semi¬circle. Brush again lightly with butter and fold into a quarter circle. Now roll out into a triangular shape 4-inch thick. Grease a hot griddle or frying pan and place the paratha on it. Cook on one side for a minute, turn over and brush with butter. Brush around the edges with butter and cook till golden brown.
