Ingredients
  1. 1 lb. liver
  2. 1 onion
  3. 1 lb. very ripe tomatoes oil for frying
  4. 1 tablespoon vinegar salt to taste
  5. ½ teaspoon chilli powder
  6. ½ teaspoon black pepper
Method
  • Trim and slice the liver thinly. Finely chop the onion; skin and sieve tomatoes. Fry the liver, in a little oil, to brown on both sides. Remove from the pan and set aside. Fry the onion until golden brown. Add the tomatoes, vinegar, salt, chilli powder and pepper. Simmer until the sauce thickens. Add the liver and cook for a further five minutes.
  • Note: Preparation time 10 minutes, Cooking time 40 minutes, To serve 4
