Cut ½ kg chicken into strips, finely chop 1 spring onion and keep aside. Heat 3 tbsp oil in pan; add 3 – 4 cloves of chopped garlic and 1 piece of chopped ginger, fry till golden brown. Add chicken strips and fry for 2 – 3 minutes till its color change. Add 4 boiled and chopped tomatoes, 1 tbsp crushed red pepper, 1 tsp turmeric, 1 tsp crushed cumin seeds, 1 tsp crushed coriander seeds, 1 tsp chili powder and salt to taste. Fry for 1 – 2 minutes. Add 1 cup water, cover and cook on low flame for 10 – 15 minutes. Now remove lid, add 2 tbsp chopped coriander leaves, 2 tbsp mint leaves and 1 chopped spring onion. Fry well and dish it out, serve hot.
