Ingredients
  1. 8 pieces lamb cutlets
  2. 2 tsp dried mint
  3. 1 tbsp honey
  4. 1tsp garlic, finely chopped
  5. 2 tbsp olive oil
  6. 1/2 tsp red chili flakes
  7. 4-5 medium potatoes
  8. Handful of chives, finely chopped
  9. ¼ cup low fat milk
  10. 4 Tbsp butter
  11. Pinch of nutmeg (optional)
  12. Salt/pepper
Method
  • To marinate lamb, in a small Tupperware mix the dried mint, honey, garlic, olive oil, red chili flakes, and season with salt and pepper. Add the lamb cutlets to the mix and leave to marinate in fridge for about an hour.
  • Boil potatoes in small pot for 20 minutes. Peel potatoes and mash with a fork or a potato masher. Add milk, butter and chives to the mashed potatoes, and season with nutmeg, salt and pepper.
  • Pre heat your bbq, or griddle pan, and cook your marinated lamb for 2-3 minutes on each side.
  • Plate your dish with mashed potatoes and lamb cutlets, and you are ready to serve.
