Ingredients
  1. 500 grams of Mutton (boneless) (cut into 1.5" pieces)
  2. 200 grams of Onions (peeled & finely chopped)
  3. 1 tsp. of Garlic (Lehsan) (finely chopped)
  4. A bunch of Fresh Coriander/Cilantro Leaves (Hara Dhania) (chopped) (for garnish)
  5. 2 Bay Leaves (Tezz Pattay)
  6. 4 Green Cardamoms (Choti Ilaichi) (crushed)
  7. 1 (2" or 3" piece) of Cinnamon Stick (Dal Cheeni)
  8. ½ tsp. of Cumin Seeds (Sufaid Zeera)
  9. 1 tsp. of Dry Ginger Powder (Adrak Powder)
  10. 1 tsp. of Coriander Powder (Pisa Dhania)
  11. 1 tsp. of Red Chilli Powder (Pisi Lal Mirch) (or to taste)
  12. 1 tsp. of Garam Masala Powder
  13. Salt (to taste)
  14. 2 tbsp. of Clarified Butter (Ghee) or Cooking Oil
Method
  • 1) Heat the clarified butter or oil, in a 1.5 liter deep dish, in a microwave on 100% power for 1 minute. Add the cumin seeds, bay leaves, cinnamon stick and green cardamoms and microwave on 100% power for 1 minute.
  • 2) Add the finely chopped onions and garlic, and microwave on 100% power for 8-10 minutes or until golden brown. Stir 2-3 times in between cooking.
  • 3) Add lightly beaten curd, salt, red chilli powder, garam masala powder , coriander powder and dry ginger powder. Mix well; add the mutton pieces and microwave, partially covered on 60% power for 4 ½ -5 ½ minutes (depending on the size of the pieces). Stir twice in between cooking.
  • 4) Garnish with chopped coriander/cilantro leaves. Allow to stand covered with an aluminum foil for 15-20 minutes before serving.
