Marinate 1 kg mutton with a little salt, 2 tbsp raw papaya paste and 4 tbsp vinegar. Keep aside for 20 – 25 minutes.
In a bowl mix together 250 gm thick yogurt, 1 tsp all spice powder, 1 tsp cumin powder, 1 tsp chaat masala powder, 1 tsp dry mango powder, 1 tsp crushed cumin seeds, 1 tsp turmeric, 1 tsp crushed red pepper, 1 tsp chili powder, ½ bunch of chopped coriander leaves, 2 tbsp ginger garlic paste and salt to taste. Mix very well.
Now coat fried mutton pieces with the yogurt mixture, put in steamer and cook for 20 – 25 minutes.
Remove in a serving platter and serve hot.
