Preheat oven to 180c. trim crust from the bread and cut into triangles. Dip one side of the bread into melted butter and press buttered side into the dish. Line the entire bottom using small pieces of bread. For the sides of the dish cut bread in rectangles and repeat procedure for sides of dish.
Save scraps and odd pieces of bread.
For filling peel, core and slice apples and add all filling ingredients into a non stick pan, cook for 5 minutes on a medium heat until filling is thick and all the water is dried. Add fresh bread crumbs and mix well.
Pack hot filling into bread lined mold and cover with more bread, buttered side out. Bake for 45 minutes until bread is deep golden in color. Let cool for few minutes and serve with sauce and icecream.
