Ingredients
  1. Mutton trotters 6
    Onion paste 2
    Lemon 2
    Green chilies chopped 4
    Green coriander chopped 1 bunch
    Chickpeas 1 cup
    Oil 1 cup
    Flour fiber ½ cup
    Red lentil ½ cup
    Turmeric powder 1 tsp
    All spice powder 1 tsp
    Roasted white cumin powder 1 tbsp
    Red chili powder 1 tbsp
    Ginger garlic powder 1 tbsp
    Baking soda ½ tsp
    Ginger chopped 2 tbsp
    Paya cholay masala 2 tbsp
    Salt to taste
    For trotter:
    Water 3 glasses
    Garlic bunch 1
    Onion 2
    Whole black pepper 6
    Whole coriander 1 tsp
    Aniseed 1 tsp
    Salt to taste
Method
  • First coat the mutton trotters with ½ cup flour fiber and leave for 5 minutes. Then wash it with luke warm water and put it in pan with 4 to 5 glasses of water, 1 tsp whole coriander, 1 tsp aniseed, 6 whole black pepper, 1 garlic bunch, 2 onions and 2 tbsp chopped ginger to boil. When trotters tender, take out the bones and put it on a side and strain the stock. Soak 1 cup chickpeas. Then in fresh water add ½ cup red lentil with chick peas to boil. When it turns soft add ½ tsp baking soda. In a pan heat 1 cup oil fry onion till it turn light brown. Then add 1 tbsp red chili powder, 1 tsp turmeric powder, 1 tsp all spice powder, 1 tbsp ginger garlic paste and salt to taste and suate. Then add trotters with stock and cook till oil separates. Add 1 tbsp roasted cumin powder and simmer on low flame. In the end add 2 lemon juice, ginger, 4 green chilies chopped and 1 bunch green coriander chopped and serve with nan.

Paya cholay is a very easy recipe which every one can make, usually I make it to utilize the extra paya gravy in the next morning when I made paya in the dinner, my husband eat it with paratha, it becomes tasty.

Paye Cholay is not a special dish it is a simple one. I would recommend people do not make such dishes when they are expecting guests.

Paye look good alone not with Cholay and other type of ingrdiant, to enhabe the taste of Paye add pinch some lemon on it. It would give you amazing taste.
